This soup is served cold. Nobody here is even willing to give it a try, which is ok by me! That means I get it all!!! Makes 6 or 8 (I can't remember off hand) 1 cup servings, 1 pt per serving!!!
2 leeks, white and tender green parts only, rinsed and chopped 1 onion, chopped 1/2 cup vegetable broth 1 medium potato, peeled and sliced 4 cups vegetable broth white pepper to taste 4 Tablespoons unflavored yogurt 4 Tablespoons chopped chives
In a covered saucepan, over low heat, cook together first 3 ingredients for 10 minutes, or until vegetables are soft. Add the next 3 ingredients and simmer mixture for about 30 minutes, or until vegetables are very soft. Allow to cool to lukewarm and then puree the mixture in a food processor. Refrigerate until serving time. Serve with a dallop of yogurt, generously sprinkled with chives.

Sounds GOOD.
I just love soups, especially those of the pureed variety.
I'm making some cream of cauliflower soup, at this very moment--using 0%fat fromage blanc instead of heavy cream, and skim milk.
That, with a nice filet of grilled and lemon-herbed salmon shall make for din-din, (with Hub getting some brown rice too, as he's not quite on the same serious diet that I am on).

It's an oversized green onion. A bunch of 3 leeks is usually about the same size (or a bit bigger) than a bunch of celery.
