After Minu's post about Tuscany, I remembered that I had a recipe for risotto that's more diet friendly than most...
Ingredients 1 C. chopped fresh mushrooms 3/4 C. long grain rice 1/2 C. chopped onion 1 Tbsp. margarine 2 C. chicken broth 2 Tbsp. dry white wine 1 Tbsp. grated parmesan
-In medium sauce pan cook mushrooms, rice, and onion in margarine over medium-low heat for 8-10 minutes or until onion is tender and rice is lightly toasted.
-Carefully add broth and wine to pan. Bring to a boil, reduce heat, cover and simmer for 15-20 minutes, or until rice is tender.
-Stir in cheese. Cover and let stand for 5 minutes before serving. Makes 6 servings.
Calories - 130 Protein - 4g Carbs - 21g Fat - 3g

I'll try it sometime with a sub of extra-virgin olive oil for the margerine.

Funny thing is, this came out of a dieter's cookbook, and there are a couple of (obvious) ways to make it even more diet friendly.

I noted that too, but I like the basic layout of the recipe. I pretty much do everything now with the stuff I have on the shelves, which is always whole-grain. But some things, sommmme mmmmaagical thangs, like Parmigiano, just cannot be substituted, only gauged as best as possible and/or made up for the next day! What IS long grain rice anyway--is it brown usually--or the refined white stuff left lonnnnng? I think I'm gonna Google fer some pics...

Sounds yummy Nooney. I may try it with Brown Rice.
Thanks for the link Minu! It's amazing all the different types of rice, I've never heard of Black and Red rice.

I actually prefer the taste and texture of brown rice over all others, pasta too, they're so much more chewwwwwwwwy. Plus, the psychological end of just knowing you're doing your body good makes it even tastier, IMO.

I would like to try this, without the mushrooms. I love long grain and wild rice. It is one of my favorite side dishes. It sounds easy enough. I love a easy meal!!
