I tried this last night with hubby. Turned out quite tasty. Most of my measurements are guess-timates (since I don't measure a lot when I cook) And this can easily be multiplied for more servings. We just had the two of us to feed last night.
1 tsp olive oil 2 boneless, skinless chicken breasts 1 small apple, cored and sliced 2 tsp tarragon 1/2 tsp garlic powder 1/4 C. apple juice 1 chicken boullion cube
Coat chicken with olive oil (just enoug so it won't stick) and place in baking dish. Add apple slices, tarragon, and garlic powder. Warm apple juice and dissolve bullion. Pour juice mixture over chicken. Bake in a 350 degree oven until chicken is fully cooked.
It has a sweet flavor and I was scared hubby wouldn't like it, but he did!!!

I don't know, I don't eat lemon chicken. But I'm sure it would pair well with that long grain and wild rice you said you like, and maybe some squash or green beans or carrots.

Well I love Pinapple chicken, Orange Chicken, And lemon chicken..
So What the hell.. WHy not love APPLES and chicken? I am gonna try this.. maybe friday, when Hubbie gets home.

One of my cookbooks has a recipe for chicken and grapes... interested?
There is so much you can do with chicken. On recipezaar you can click links to ingredients and it will show what it pairs well with... the list for chicken is outrageously long!!!
